Dice the bacon or the ham and fry them slowly in olive oil or butter in a frying pan. Add the onions and moisten with just enough white wine or vegetable stock. Add a little cream and thicken it with flour as necessary. Season and add the peas. Bring to a boil. The cooking time for the pasta is about 9 minutes. Serve with or without grated cheese.
Peel and grate the raw beets (2-3 pieces), add the blackberry vinegar, pepper, , salt and the aromatic herbs. Peel and chop the onions. Add the seasoning oil and hamp oil.
Finally, add a bay leaf and leave to rest in the refrigerator (ideally overnight).
