Whip 115 g butter with an electric mixer. Add 125 g winter cheese, 1 teaspoon thyme, ½ teaspoon salt and ½ teaspoon ground black pepper. Mix well. Add 150 g flour (type 405) and continue to mix until you obtain a crumble dough.
Shape the dough into pieces (4 cm ø), wrap them in cling film and keep them in the fridge for 30 minutes. Preheat the oven at 180 °. Place the baking paper on the baking tray. Cut the pieces of pieces of dough into 5 mm slices. Place the slices on the baking tray and bake for 18 to 20 minutes, until the cakes are lightly golden brown. Leave them to cool before serving them as an aperitif!
