Crush 220 g cheese and add 220 ml cream. Leave to cool for a few moments. Add the egg white (4 eggs) and 1 teaspoon flour. Mix well. Add salt and pepper, and a dash of nutmeg, if desired. Beat the egg white until stiff and fold it gently into the cheese mixture. Unroll the shortcut pastry on a tart tin, placed diced ham or fried bacon bits on the bottom (leave to drain on a paper towel), and add the mixture to the cheese. You can also add a few shallots to the diced ham or fried bacon, or prepare a vegetarian version without ham or bacon bits. Bake at 170-180 ° (depending on the oven) for 25-30 minutes.
For a home-made shortcrust pastry, mix 250 g flour, 125 g butter, 1 egg yolk, 1 dl cold water and a pinch of salt until you obtain a dough. Tip: Brush the dough in the mould with egg yolk and pre-bake it for 7-8 minutes before adding the cheese mixture to prevent it from getting soggy.
