Use a hook to knead an egg, 75 g sugar, 75 g butter, 250 ml milk, 400 g flour and 1 cube of fresh yeast (42 g) or 2 sachets of baker’s yeast until you obtain a smooth and homogeneous dough. Add 10 g salt and continue to knead for another 2 minutes. Make two identical balls and leave them to rise for an hour. Work the dough and leave it to rest for another half hour. Spread the dough in a circle and insert about ten cubes of butter into each dough. Brush with egg yolk and sprinkle with sugar.
